RESTAURANT CART


STAINLESS STEEL RESTAURANT CART
The stainless steel restaurant cart is one of the most important items in a professional kitchen or industrial kitchen, allowing to organize work, streamline transport within the work area, facilitate internal logistics and avoid accidents.

In restaurants and industrial kitchens, carts are true wildcards, used to transport products from receiving to the displacement of different items within the professional kitchen, such as containers, vats (used in ovens, refrigerators and cold rooms), ready-made dishes, thermos bottles, pans, cauldrons, plastic boxes, sacks, bread pans, trays, barbecue, in addition to draining and transporting dishes.

An important characteristic of the stainless steel restaurant cart is that it can be easily disinfected, either by washing or by applying proper products for sanitizing and disinfecting, not spoiling and preserving its conditions.

There are different types of models Each cart model serves a different purpose. Among the main ones are:

CART FOR GNS TRANSPORT
Widely used in industrial kitchens and restaurants, this model in versions 6, 12 and 24 vats, allows gastronomic containers, standard measuring vats used in ovens, refrigerators and cold rooms to be packed one on top of the other. They are made of stainless steel 304 (the best) and can be placed in humid environments and wet places. The wheels of this model are 3 inches, all swivel, two with brakes and two without. Some models fit to plastic trays used in Self Service restaurants. They are also known as a skeleton cart.

MULTIPURPOSE CAR WITH 2 AND 3 PLANES
These carts are the wild card of transportation in the kitchen. With multiple functions, they transport ready-made dishes, thermos bottles, pans and cauldrons, among others. Manufactured in 430 steel (simpler) they can come with 2 or three trays, flat or inverted. It has an anatomical handle and comes with 3-inch wheels, 2 with brakes and two without.

CART FOR TRANSPORTING PLASTIC BOXES
The cart for transporting plastic boxes allows the perfect fit of 3 to 8 boxes. These boxes can come with or without a lid in a number of different sizes. Also in 304 steel comes with 3-inch wheels, 2 with brakes and two without. A variant of this model is manufactured to transport monoblocks (larger boxes) of 60x40x18 and 67x44x19. TURTLE CAR
Flat, low-level floor cart (hence called a turtle). For a lot of weight, it allows the fitting and transport of plastic boxes full of fruits and vegetables. The cartons are stacked up to a height of 1.20 and easily pushed by the operator, speeding up movement and avoiding excessive force.

BARBECUE & STEAK CART
This model, new in Brazil, comes with 3 plans, polyethylene board for cutting meat and other foods. Widely used in the gourmet area, it has an excellent finish and allows all barbecue items to be organized in the same place.

PLATFORM CAR FOR TRANSPORTING SACKS
The cart for transporting sacks is flat and low. It has 5-inch wheels to take a lot of weight. The front ones are fixed and the rear ones swivel and have a brake. They carry up to 300 kg and are also made of 304 steel. They have a strong handle and are pushed or pulled by a single person. In addition to the bags, they can be used for several other purposes, from receiving products to moving them inside the kitchen.

BAKERY SKELETONS
To place the bread pans and other trays, they can be manufactured as the customer wishes. They can have more divisions and the distance between them can also be pre-defined.

DISH DRAINER CAR
This cart is often used for draining and transporting dishes. It has 3 floors and each floor holds 58 dishes. At the bottom there is a collecting tray so that the water does not fall on the floor. Also manufactured in 304 steel, with 4-inch wheels. One of the concerns of the owners of establishments that transport many dishes is safety. In this cart the dishes are well accommodated.

BEFORE CHOOSING THE RESTAURANT CART
Before choosing the most suitable restaurant cart model for your establishment, it is worth checking the professional kitchen workspace:

  • The path the cart will need to travel;
  • Make sure there is enough space
  • See the floor surface.
  • The floor must be of smooth, resistant, waterproof, washable, light colors and in good condition, non-slip material, resistant to the attack of corrosive substances and that is easy to clean (washing and disinfecting), not allowing the accumulation of food or dirt. It must have a sufficient slope towards the drains, not allowing the water to become stagnant. In areas that allow existence, the drains must be siphoned, and the grids must have devices that allow closing.

CARE IN TRANSPORTING YOUR INDUSTRIAL KITCHEN
  • The means of transporting food intended for human consumption, refrigerated or without refrigeration, must guarantee the integrity and quality in order to prevent contamination and deterioration of the products.
  • Always take into account that equipment, furniture and utensils that come into contact with food must be made of materials that do not transmit toxic substances, odors or flavors to them, as established in specific legislation. They must be kept in an adequate state of conservation and be resistant to corrosion and repeated cleaning and disinfection operations.
  • It is prohibited to keep or transport in the same compartment, ready-to-eat foods, and other foods and foreign substances that could contaminate or corrupt them; with the exception of foods packaged in hermetically sealed, impermeable and resistant containers, as long as they are not toxic products.
  • When the nature of the food so requires, it should be placed on shelves and platforms, removable when necessary, in order to avoid damage and contamination.
  • It is not allowed to transport food together with people and animals.
  • Hygiene and disinfection methods must be adequate to the characteristics of the products and transport vehicles.
  • The materials used to protect and secure the cargo (ropes, tarpaulins, plastics and others) must not constitute a source of contamination or damage to the product, and must be disinfected together with the transport vehicle. Loading and/or unloading must not represent a risk of contamination, damage or deterioration of the product and/or food raw material.
  • The means of transporting the prepared food must be sanitized, and measures taken to ensure the absence of vectors and urban pests.
  • Sanitation operations must be carried out by employees who are proven to be capable and frequently to guarantee the maintenance of these conditions and minimize the risk of contamination of the food.
  • Taking all these precautions, you will choose the most suitable restaurant cart for your use, and still stay within the standards and regulatory body of the industry.
